Healthy Eating Habits: A Blueberry Breakfast Treat

This is a great time of year to enjoy the fabulous flavor and health benefits of blueberries. Here is a blueberry muffin recipe that only takes about 30 minutes start to finish. If you can measure, dump ingredients into a bowel, and stir you can master this recipe.

Health Nut Blueberry Muffins

Along with the vitamins and antioxidants provided by the blueberries, one muffin will give you about five grams of protein.

For one dozen muffins you will need:

3/4 cup all-purpose flour
3/4 whole wheat flour
3/4 cup white sugar
1/4 cup oat bran
1/4 cup quick cooking oats
1/4 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup blueberries
1/2 cup chopped walnuts
1 banana, mashed
1 cup buttermilk
1 egg
1 tablespoon vegetable oil
1 teaspoon vanilla extract

Preparation:

  1. Preheat oven to 350 degrees F, or 175 degrees C; grease a 12 cup muffin tin or line with paper muffin cups.
  2. In a large bowl, mix together the dry ingredients: all-purpose and whole wheat flour, sugar, oat bran, quick-cooking oats, wheat germ, baking powder, baking soda, and salt.
  3. Gently, stir in the blueberries and walnuts.
  4. In a separate bowl mix together the wet ingredients: mashed banana, buttermilk, egg, oil, and vanilla.
  5. Pour the wet ingredients into the dry ones and mix—just until blended. Spoon the batter into the muffin cups, filling them to the top.
  6. Bake the muffins 15 to 18 minutes or until the tops spring back if lightly touched.
