Easy Healthy Eating: Savory Sandwiches
With just a bit of chopping and combining it is easy to enjoy a delicious and nutritious sandwich.
Becoming a sandwich gourmet is a convenient way for those of us who do not enjoy cooking to create healthy and appetizing meals. By choosing lean meats, fresh produce, healthy oils, and fiber rich breads you determine the fat and calorie content without sacrificing the nutrients your body needs.
There are plenty of quick sandwich ideas available, or you can experiment with your own bread-wrapped creations. Here are a couple recipes you may want to try.
Greek Pita Sandwich
It is doubtful that John Montagu, the fourth Earl of Sandwich, imagined that putting lunch meat between two slices of bread would lead to countless concoctions bearing part of his name.
The story is that Montagu, an 18th century English noble, wanted a meal he could eat with one hand because he was in a 24 hour gambling event. So, he asked for his meat to be wrapped in bread. Chances are, though, eating this Greek pita sandwich will require two hands.
You will need:
1/4 cup hummus
1/4 cup chopped romaine lettuce
1/3 cucumber, chopped
1 small tomato, chopped
2 tablespoons low-fat plain yogurt
1 teaspoon McCormick greek seasoning
Combine all the ingredients, stuff the mixture in a 6-inch pita, and enjoy.
Turkey and Granny Smith Apple Sandwich
We usually have fruit on the side with a sandwich, but adding fruit to a sandwich is a burst of flavor option.
You will need:
3 ounces sliced turkey breast
1/2 of a Granny Smith apple, thinly sliced
1/2 cup salad greens
1 tablespoon Dijon mustard
2 slices of your favorite whole grain bread
Spread the mustard on your bread and pile on the other ingredients. The turkey sandwich just became un-boring.
